Beetroot and Kale slaw with The Versatile One Dressing

Vegan

Ingredients


Salad (serves 4 as a side)

  • 3 carrots, grated

  • 3 medium beetroot, grated

  • 2 handfuls kale, shredded

  • Small bunch of parsley, chopped

  • 2tbsp sunflower seeds, toasted

  • 2 tbsp pumpkin seeds, toasted

  • Small handful mung beans

  • Fresh blackberries (if you can find them)

Dressing

  • ½ jar The Versatile One

  • 1 lemon, juiced

  • 2 tbsp apple cider vinegar

  • 3 tbsp olive oil

Method

  1. In a nutribullet, blend the dressing ingredients together until smooth.

  2. Season with salt and pepper.

  3. Add more apple cider vinegar if you like it slightly punchier.

  4. Combine all the salad ingredients in bowl.

  5. Toss with the dressing.

  6. Serve with extra parsley and blackberries.
